因為屏東肉圓幾乎沒用蕃薯粉，在來米粉含量接近100％
所以皮幾乎沒延展性，比較接近碗粿，用包子的蒸法一定會破。
所以必須保留湯汁，用半蒸半隔水加熱的方式處理...
另外全台灣我也只看過屏東肉圓裡包的是滷梅花肉丁+滷胛心肉丁，而不是絞肉，這也是獨特點（台南福記肉圓師承屏東夜市，餡料一樣，但作法稍有不同，醬料也改成台南甜醬）
