				因為屏東肉圓幾乎沒用蕃薯粉,在來米粉含量接近100% 
 
所以皮幾乎沒延展性,比較接近碗粿,用包子的蒸法一定會破。 
 
所以必須保留湯汁,用半蒸半隔水加熱的方式處理... 
 
另外全台灣我也只看過屏東肉圓裡包的是滷梅花肉丁+滷胛心肉丁,而不是絞肉,這也是獨特點(台南福記肉圓師承屏東夜市,餡料一樣,但作法稍有不同,醬料也改成台南甜醬)
